Whey Protein Isolates

Whey protein isolates from Hilmar Ingredients are ideally suited for products wanting a positive nutritional advantage. Sharing its healthy halo – consumers perceive protein as contributing to wellness – whey also appears to increase satiety more than other proteins. It’s a complete protein, with a PER of 3.2 and a “perfect” PDCAAS of 1.0. Whey proteins have an abundance of amino acids that provide a source of energy during prolonged exercise.

Hilmar WPIs make good on functional benefits, too. Their thin-as-water viscosity make light beverages such as energy drinks, fortified waters and isotonics, possible. Protein shots can have protein concentrations of 18 or 19% without unpalatable thickening. Acid and heat stability allow Hilmar WPIs to withstand the rigors of juice fortification, pasteurization and heat processing.

Hilmar™ 9420 is ideal for low pH applications and reduces overall astringency. Hilmar™ 9400 is clear in liquids, and its clean flavor is equally transparent in formulations. Hilmar™ 9410 instantized WPI has spoon-stirrable dispersibility for dry mix applications. Hilmar™ 9000 is a practical formulation choice for nutritional bars and delivers greater than 90% protein, with almost no fat or carbohydrate.

Hilmar™ 8800 Alpha-Lactalbumin Enriched WPC

It’s the unique amino acid profile of alpha-lactalbumin, one of milk’s major whey proteins, that’s intriguing. Like all whey proteins, it has the full complement of essential amino acids needed for good health. But alpha-lactalbumin also has a higher concentration of two specific amino acids – tryptophan and cystine – thought to have influence on cognitive performance, sleep efficiency and mood support during stress. In addition, alpha-lactalbumin may play a role in enhancing the body’s ability to absorb minerals, such as zinc, immuno-modulation and regulation of gut micro flora.

Whey Protein Hydrolysates

Whey proteins contain bioactive components that may positively affect cardiovascular health. In particular, these components can inhibit activity of the body’s angiotensin converting enzyme (ACE), which causes blood vessels to constrict, and thereby help to reduce blood pressure. When produced under specific manufacturing conditions – including selected enzymes and other hydrolysis parameters, whey protein hydrolysates have been shown to be an especially good source of this ACE inhibition effect.
